There are endless possibilities with herbs says Dr Lelia Kelly

Experiment with culinary herbs for better recipes, advises Dr Lelia Kelly of the Mississippi State University.

The herb expert invited people to play around with traditional herbs, in particular basil, sage and oregano.

"The best advice I can give about cooking with herbs is to experiment," Dr Kelly told The Dispatch.

"Herbs have so many functions. They release wonderful aromas, add beauty to the landscape, are great additions to any recipe and have health benefits."

She goes on to suggest that home cooks use herbs to flavour oils, vinegars, butter or margarine, breads, deserts, beverages and more.

"The possibilities are endless," she explains.

Chefs were recently encouraged to use classic herbs infused in olive oil by recent studies that suggest it could reduce the chance of strokes for over-65s.

The study of 7,000 people across three French cities found that those who regularly use olive oil were 41 per cent less likely to have a stroke.
