Exmoor Food Festival offers cooking courses

Visitors to the Exmoor Food Festival to benefit from lessons in seasoning and cooking game

Foodies from around the country will soon be heading down to the Exmoor Food Festival to try out some of the creative cuisine on offer.

This year's festival, which runs from October 1st to 9th, will feature cooking courses, covering everything from chocolate making to seasoning savoury dishes, as well as ale sampling and wine tasting.

Rachel Kelly, the festival organiser, commented: "[There will be] a two hour cookery demo exploring some interesting ways to cook and serve furred and feathered game and incorporating other wild and local produce along the way."

Chef Jonathan Benno advises that feathered game, such as hens, should be seasoned with thyme, rosemary and freshly ground black pepper as they are grilled.

He told Food & Wine magazine: "It's the best way to cook a bird all the way on a grill… You get those nice grill marks, and by the time the chicken's got good colour on both sides, it's cooked all the way through."
