Celebrity chef Beginners should try easy butter balsamic vinaigrette

Pan sauces can be great for beginners says celebrity chef

US celebrity chef Traci des Jardins has advised budding cooks to try their hand at her adventurous recipe that won her the TV-show competition Top Chef Masters.

Speaking with Mercury News, the chef touted her brown butter balsamic vinaigrette as the perfect pan sauce for a beginner.

"It's a pretty easy sauce, like a Sauce Meuniere, which is browned butter, lemon and parsley. Here it's just brown butter with a little balsamic vinegar, which has a lot of sugar to help create that emulsification," she explained.

The sauce is then seasoned with ground black pepper and sea salt and can be served with a variety of dishes, such as Ms Des Jardins' halibut dish.

She added: "It's a delicious, quick pan sauce. I've been using it for years and years and years. It's a little magic trick that produces a really great sauce with not a lot of skill involved."
