Season artichoke and mayo with herbs

Add herbs to mayo

As a professional chef, the onus is on you to come up with dishes that will excite, inspire and ultimately satisfy your customers.

With this in mind, you need to come up with meal ideas that contain delicious flavours and combinations of tastes that complement each other perfectly - such as artichoke and mayo with herbs.

Yotam Ottolenghi, writing for the Guardian, has put forward globe artichoke salad with preserved lemon mayonnaise and cauliflower pakoras as a great option for the kitchen.

While some of the ingredients are quite apparent - such as artichokes, lemon juice and Dijon mustard - it might just be the culinary herbs that give the dish its immense flavour.

Mr Ottolenghi recommended mixing thyme, dill, tarragon, salt and pepper with the artichokes and potatoes.

Our resident expert Chef Steve has had his say on herbs and spices in the past, describing them as a great way to season food without resorting purely to salt.
