Chillies can bring something new to a sea bass

Our resident expert Chef Steve says culinary spices and herbs offer a great deal of scope for this approach - and this versatility is one of his favourite things about the ingredients.

In an article for the Daily Telegraph, professional cook Diana Henry recommended the use of cayenne pepper, cumin, chillies and garlic when preparing a delicious roast sea bass.

The best thing about this kind of recipe is the fact that it is highly customisable - so why not try to bring your own twist to it by introducing your own combinations of exciting new ingredients?
