Paprika can add to a refreshing gazpacho

Paprika is great in summer soups

As the unseasonably wet weather looks like it is finally retreating and the summer season is fully upon us, caterers will want to be thinking of refreshing dishes in order to cater for different demands from diners.

In an article for the Observer, celebrity chef Nigel Slater recommended a gazpacho, which could be perfect as a starter or light bite option.

"Gazpacho is a perfect chilled dish for a refreshing summer's lunch," Slater commented, adding: "How you make it is a matter of hot debate."

He suggested using garlic and paprika - but caterers could bring their own unique twist to the meal by adding a distinctive combination of culinary herbs and spices.
