Herbs are great in a seafood salad

When attempting to come up with new inspirational recipes to keep the menu as interesting and varied as possible, there are many places caterers can turn for inspiration.

For instance, why not try simply experimenting with new combinations of ingredients?

Our resident expert Chef Steve says that herbs and spices are particularly well suited to this approach.

Indeed, he adds that the scope for trying new things offered by the ingredients is one of his favourite things about them.

In an article for the Independent, professional chefs and authors of the Surf 'n' Turf cookbook Martin Shanahan and Paul Flynn recommended the use of garlic and coriander in a recipe for a seafood salad, which they claim is a big hit with diners.
