Garlic creates a fragrant Middle Eastern dressing

Garlic can really help a dressing stand out

With the summer sun finally looking like it is here to stay, caterers up and down the country will be altering their menus to accommodate demand for more refreshing dishes.

Simple salad options can be very popular with diners at this time of year - but can present the cook with problems as to how they can ensure their restaurant's offerings truly stand apart from the crowd.

Here at Schwartz for Chef, we really advocate culinary innovation and our resident expert Chef Steve says researching the culinary traditions of other cultures is one of the best ways to achieve this.

In an article for the Independent, celebrity chef Bill Granger recommended taking advantage of the produce of the season, adding that heritage tomatoes are still going strong.

He suggested using garlic and mint to produce a "fragrant Middle-Eastern dressing [that] compliments them" - and this can also be customised with alternative herbs of your own selection.
