Add dill to an extreme comfort food

Potatoes are a key comfort food

When coming up with new additions for a restaurant's menu, chefs would be wise to think of what kind of mood their diners are likely to be in when they visit.

For instance, as the country is being plagued by unseasonably wet weather, people may be more likely to go for a comfort food option.

Our resident expert Chef Steve says researching the culinary traditions of other cultures is one of his key professional inspirations - and there is no reason cooks cannot combine these two approaches.

In an article for the Guardian, chef and patron of Ottolenghi and Nopi in London Yotam Ottolenghi suggested preparing a Laxpudding, which he described as being an extreme comfort food.

This is a classic Swedish meal and includes the use of dill weed.
