Worrall Thompsons herby mackerel the perfect al fresco dish

Herby mackerel is a tasty and healthy dish

People who need to come up with inspirational recipes for a dinner guest with diabetes may want to look at one of Antony Worrall Thompson's books for ideas.

'The Diabetes Weight Loss Diet', penned by the celebrity chef, contains a number of interesting recipes that are ideal for those who struggle with their blood sugar.

One suggestion is 'herby mackerel', which is described as "the perfect al fresco dish".

According to the book, it contains "an abundance of herbs and citrus flavours" and is "delicious" served with potatoes and a fresh tomato salad.

In order to prepare four helpings of the dish, which provides just 430 calories per serving, cooks will need four small mackerel, a slice of soya and linseed bread, and 1tbsp each of chopped parsley and coriander, along with the zest of one lemon and one orange.

The recipe also calls for half a teaspoon each of ground cumin and ground coriander, a pinch of chilli flakes and half a teaspoon of olive oil, as well as 100ml of fish or chicken stock.

Worrall Thompson is one of a number of celebrity chefs who will be making an appearance on one of MSC Cruises' gourmet voyages in the near future, as the chef has agreed to show passengers some of his culinary skills.
