US cyclist to face Tour de France on vegan diet

US cyclist promises to stay true to vegan diet while on Tour de France

Top American cyclist David Zabriskie will be experimenting with creative cuisine as he has announced he intends to compete in the Tour de France on a vegan diet. 

Avoiding all meat, dairy or egg products, the three-time veteran of the circuit will have to develop a unique diet to consume the 8,000 calories per day required to ride the 2,200-mile course.

Mr Zabriskie told the Wall Street Journal that his performance has improved since switching to a vegan diet a year ago.

"I think a lot of people see food in terms of whether it's going to make them fat or make them skinny," he said, adding: "I'm seeing food in terms of how it's going to make me think and will it give me clarity." suggests that home cooks try their hands at its meat and dairy-free Aubergine and Butter Bean Biryani, seasoned with garam masala, ground coriander, turmeric and chilli powder.
