Tofu packets flying off shelves

Westerners are increasingly choosing to eat tofu

Westerners are rapidly waking up to the possibilities of tofu in their creative cuisine, according to an article in the Pacific Daily News.

Writer Janice Miller points out that Asians have been savouring tofu for centuries, but that until recently, western people "have only cautiously sampled bits here and there".

Now, however, this has changed and a growing number of people are taking tofu home to try out new dishes.

Ms Miller explains that tofu is particularly versatile, revealing: "Plain tofu can be diced into cubes and eaten raw. The small cubes can also be added to salads or soups, fried, marinated or grilled."

Cooks looking for recipe ideas may want to try an Indian tofu rice dish, consisting of rice, tofu, soy sauce, celery, courgette, red or green pepper and tomatoes.

The recipe, which is available on the Savvy Vegetarian website, also includes a number of herbs and spices, including cumin, black mustard seed, basil leaves, dried marjoram leaves, dried thyme leaves and half a cinnamon stick.
