Apricots benefit from huge range of flavours

Apricots can be cooked in a variety of ways

An award-winning food writer has extolled the virtues of apricots, describing them as 'the' summer fruit and revealing a number of inspirational recipe ideas to help get the most out of them.

Writing in the Telegraph on Sunday, Diana Henry admits that bad apricots can be 'disappointing', but claims supermarkets have upped their game this year and are selling much more impressive examples of the fruit.

Even poorer specimens can be improved through cooking, the expert claims.

She reveals: "You can roast them with lime or lemon juice, a few knobs of butter and spices such as cinnamon, ginger or cardamom, plus a good sprinkling of sugar.

"Or you can cook them in sugar and wine or fruit juice, the liquid coming just halfway up the sides of the fruit. To this you can add amaretto, elderflower cordial, lavender, vanilla or honey."

As well as making apricots the focal point of a dessert, cooks may want to prepare a traditional Moroccan lamb dish with apricots, almonds and culinary spices.
