Spice up a salad in January

After the indulgences of the party season, many people will be looking to make new years resolutions in regard to their diet.

However, that does not mean that the taste needs to be compromised in search of fewer calories.

Writing in the Independent, Mark Hix outlined the ideal meal – a prawn persimmon and cucumber salad.

Not only will this be light and filling, it will also deliver plenty of taste with a great mix of culinary spices including root ginger, coriander and black sesame seeds.

Our resident expert Chef Steve says that the combinations of spices will not only be a treat, but could also boost the metabolism.

Indeed, Mr Hix has opted for plenty more hot flavours in his salad dressing.

One small chilli, one stick of lemon grass, more ginger and fish sauce all go into the lime-based dressing.

The chef added: "I recommend that you buy raw prawns in the shell and cook them so that you can get a second meal out of them in the form of a broth."
