Salads can be spicy and refreshing

Spices can complement fruit

When it comes to preparing starter options, it is easy for professional caterers to rest on their laurels and throw any old salad or soup offerings together.

However, there are plenty of methods for more adventurous individuals who wish to try something much more experimental.

Our resident expert Chef Steve says that combining different varieties of culinary spices and herbs is a great way to do this.

In an article for the Guardian, Yotam Ottolenghi - co-author of the Jerusalem cookbook with Sami Tamimi - suggested a spicy and fruity pink grapefruit and sumac salad.

Chillies and basil were among his choice of ingredients - and there is plenty of scope for experimentation with different herbs and spices here.

Juniper berries could be an interesting alternative and a spice like cinnamon - or maybe even ginger - is great for those who might like to try out a slightly sweeter salad.
