Try an award winning bittersweet chocolate cake

Chocolate provided the basis of an award winning dish

Those looking for new sources of inspiration that will spur them on to come up with more creative cuisine could attempt to recreate a bittersweet chocolate cake recipe.

Chris O'Halloran of The Green Inn in Ballater, Scotland, came up with the sweet and won ITV1's Britain's Best Dish: The Chefs competition.

McCormick's resident expert Chef Steve says judging such culinary events is one of his key sources of inspiration, but caterers could also use this to their advantage by adapting ideas they like that are tabled during this kind of activity.

"I was over the moon to win Scotland's best dessert and anything after that was a bonus," Mr O'Halloran remarked.

The course involved using a cookie as a base, topping with chocolate cake, adding another cookie, with a further layer of a cinnamon ice cream ball and crowning with a smaller cookie.

Chocolate sauce was recommended as an optional serving suggestion.
