Take inspiration from an award winning Spanish dish

Spanish food could be a source of creative inspiration

Caterers who enjoy studying other culinary cultures as sources of inspiration for their creative cuisine could borrow some ideas from an award-winning menu.

Ben Murphy from Koffman's at the Berkeley restaurant has been named the Spanish Young Chef of the Year.

McCormick's resident expert Chef Steve says judging at culinary competitions is a source of creative influence for him and caterers not able to attend these events could still use the results as a starting point for their own recipes.

Foods from Spain director Maria Jose Sevilla said the purpose of this competition was to encourage understanding of food from the country.

"Every year it amazes me - the knowledge about flavours and ingredients and what they come up with," she commented.

Leg and breast of duck made up the main course, in addition to potato cannelloni, stuffed morcilla cherries and seasonal vegetables and it was noted sous vide was a popular method of preparation.
