There could be an increased demand for health foods in 2012

One consideration chefs may wish to take into account in 2012 is how they can prepare inspirational recipes from healthy foods.

This is because research from the NPD Group has found increased demand for improvement in the benefits of children's school meals.

It was suggested there could be wider implications for the rest of the catering industry, as this demand is likely to shape the offerings of restaurants in the future.

Older generations such as the baby boomers are also likely to be influencing this trend, as seafood dishes were found to be a popular option among these individuals.

"Operators need to understand what influences will affect consumer behaviour and drive traffic in the next 12 months," commented restaurant industry analyst for NPD Bonnie Riggs.

Some caterers could follow the example of Italian food chain Pizza Express, which recently launched a 500-calorie skinny pizza option, which is aimed at health-conscious diners.
