Spices can do great things

Hugh Fearnley Whittingstall claims a mixture of spices can bring new things to many dishes

Chefs who use spices to bring new tastes to their offerings may find bringing them together in unusual flavour pairings "can do great things".

This is according to Hugh Fearnley-Whittingstall, who wrote in an article for the Guardian that this can be a useful and versatile approach.

He added this can be used to segue between sweet and savoury dishes and can make intriguing and complex meals.

McCormick's resident expert Chef Steve agrees, claiming the versatility of culinary spices is one of the things that makes him passionate about the ingredients.

Fearnley-Whittingstall said allspice is one of his favourite mixtures, as it is not restricted to cake baking and includes bay, citrus, mace, clove, cinnamon and black pepper.

It was noted this also forms the backbone of jerk recipes and "is also found in many Latin American and Middle Eastern dishes, as well as in the cupboards of cake and biscuit-bakers the world over".
