Poach pears in cardamom and ginger for a spicy dessert

Why not try a pear recipe suggested by Lorraine Pascale

Cooks looking for dessert recipes that incorporate culinary spices for a new and unique menu option could try poaching pears in cardamom and ginger.

This is the advice of celebrity chef and former model Lorraine Pascale, who described the dish as "the perfect refreshing dessert to have after a warming meal" in an article for the Guardian.

Preparation involved placing wine, sugar, lemon zest, ginger, cardamom, cinnamon, vanilla, pepper and cloves into a pan on a high heat with a single layer of pears arranged in the mixture.

The ingredients are then left to poach in the fridge for two to three days, after which Pascale's serving suggestion was to stir in honey and sprinkle with toasted hazelnuts.

McCormick's resident expert Chef Steve says one of his favourite aspects of herbs and spices is their versatility and being usable in savoury and sweet meals is demonstrated in Pascale's recipe.
