Huevos motulenos is a classic Mexican dish

Fruit salad can make a great side dish for a Mexican huevos motulenos

Chefs thinking about shaking things up a bit on their menu could try offering food inspired by Mexican cuisine.

McCormick's resident expert Chef Steve says researching other culinary cultures is one of his key professional inspirations and there is no reason other caterers are not able to follow the same cues.

Rick Bayless, chef patron of Frontera Grill in Chicago, recommended a huevos motulenos recipe in an article for the Guardian.

"If you make everything from scratch, it'll take a little time in the kitchen," he warned, recommending the dish is assembled just before it is served up with a side of fruit salad.

Preparation involved making a sauce of roast tomato juices, before heating with vegetable oil, onions, chillies and more tomatoes, seasoning with salt to taste.

A sauce is a useful condiment that can be applied to a wide range of other dishes to introduce new flavour pairings.
