Add fruit and spices to a pudding dish

Banana and chocolate offer a unique twist on bread and butter pudding

One way in which caterers could bring new twists to conventional pudding recipes is to try new flavour pairings.

For instance, celebrity chef Hugh Fearnley-Whittingstall recommended adding bananas to a bread and butter pudding.

He explained the dish is a personal favourite and he loves experimenting with new variations on the basic theme.

McCormick's resident expert Chef Steve says this is a really good way of coming up with new recipes and it could also keep diners coming back for more if they know there'll be something new to sample.

Fearnley-Whittingstall said his offering "is very good for these dark days of the year, when there's so little fresh, home-grown fruit about".

Preparation involved stirring milk, cream, vanilla extract and gratings of nutmeg into the usual liquid mixture and layering bananas with the slices of bread.

Another twist that could be used is the addition of a layer of chocolate, but do you have any new ideas on how to serve old favourites?
