Diners' choice of Christmas food is typically thought of as being very traditional - but this does not mean that professional caterers should not try to come up with one or two adventurous twists on the classic formula.

Indeed, the fairly conventional roast leaves so much scope for innovation that it would be a shame to overlook the opportunity.

Our resident expert Chef Steve says that one of the easiest ways to come up with new cooking ideas is to try different combinations of culinary spices and herbs.

Celebrity chef Bill Granger suggested this could work particularly well with the vegetable portion of the dish.

"For all its abundance, Christmas food can often be quite plain, so when roasting carrots and parsnips I like to give them a bit of a kick with some chilli," he commented in the Independent.

So don't be afraid to let your imagination run wild.
