Resurrect festive leftovers with herbs and spices

Dont throw away festive ingredients yet

While the big day has been and gone, this does not mean that the festive season is completely over!

However, up and down the country, professional caterers are likely to be piled up with leftover seasonal ingredients that they don't know what to do with.

One great way of using these up without resorting to massive amounts of waste is to throw them all together in a pie dish.

In an article for the Guardian, professional chef Felicity Cloake said that a typical construction could be a turkey and ham pie with brussels sprout salad and cranberry vinaigrette.

"Pies are a godsend to the harassed post-Christmas cook," she remarked, adding that while diners might snub more turkey slices, "stick them under a golden halo of pastry and they'll fall upon them like ravenous wolves".

A perfect finishing touch could be provided with the judicious addition of culinary herbs or spices - giving the flavour a fresh twist.
