Anyone trying to come up with interesting nibbles to serve up over the Christmas period cannot go wrong with olives flavoured with culinary herbs.

Spanish chef Omar Allibhoy told This is Bristol it is best to make them from scratch, as they can be tailored to personal taste - plus shop-bought varieties are usually expensive.

He explained that all is necessary is Spanish olives, olive oil and whichever herbs you choose to create endless flavour combinations.

Mr Allibhoy suggested using two cardamom pods, a cinnamon stick, two kaffir lime leaves and two centimetres of fresh ginger, rubbed together with crushed garlic and peppercorns.

The mixture can then be added to 100 ml of olive oil for a fantastic marinade that will be ready to serve in 20 minutes.

It will also keep in the fridge for as long as a month if placed in an airtight container.

Why not also try olives in an omelette or stew in the days after Christmas?
