Enjoy a spicy fish curry on New Years Eve says Nigel Slater

A spicy fish curry flavoured with ground cumin is the perfect meal for New Year’s Eve, according to celebrity chef Nigel Slater.

In an extract from his new book Kitchen Diaries II published by the Observer, Slater noted that while simple, effortless cooking is all well and good, it's sometimes good to make some mess and "use every pan and bowl in the kitchen".

Although not overly complicated, a fish curry flavoured with cumin, curry powder and tamarind can be particularly satisfying ahead of a New Year's Eve party.

To get started, finely chop onion and garlic, before crushing lime and curry leaves, chillies, cumin and coriander seeds in a food processor. Add chilli and curry powder plus three tablespoons of water to make your curry paste.

After mixing all the tamarind stock ingredients together, bring it to the boil, then turn down the heat and simmer for ten minutes, before adding onions, garlic, tomatoes, stock and the large chunks of fish.

"I follow the recipe, but it is about more than that, it's about cooking or the thrill and joy of it all," Slater explained.
