Chefs can easily give their dishes a signature says expert

Something as simple as experimenting with different blends of culinary herbs and then adding them to dishes could help chefs to create their own signature foods.

This is according to Christopher Lambert, a former journalist and travel writer who has crossed the globe to find interesting foods in other countries, the Hindu reports.

He recently teamed up with other like-minded individuals to produce a coffee table recipe book called Masala and he wants to encourage people in Britain to have some fun in the kitchen.

"Making a dish with spice is more of a question of daring. If you dare to use good spice you will always enrich your plate," Mr Lambert commented.

Ginger was particularly recommended for the favourite curry, with the expert saying it can give a classic dish a new zing.

The same herb was recently recommended as a good way to beat off winter germs by chef Jamal Rahman, as was turmeric.
