Although Christmas dinner is undoubtedly the most celebrated meal of the festive season, cooks will also be trying to come up with new ideas for foods to eat on other special occasions - a Boxing Day buffet, for example.

One sweet suggestion was made by master baker Rose Prince in an article for the Daily Telegraph, who suggested adding cardamom to a traditional recipe for a pineapple upside-down cake.

She said the spice will add a light flavouring to the sponge and it will also be "a beautiful thing to look at".

Cardamom is perhaps more commonly associated with Indian main courses, but its warm, citrusy tang will be the perfect accompaniment to pineapple in this cross between a cake and a pudding.

Ms Prince said the spice should be added right at the bottom of the cake tin with the butter and sugar.

"Serve with whipped cream, flavoured with a little rum, or thick Greek yogurt," she concluded.
