Spices required for Christmas cake

Cinnamon and ginger help flavour a Christmas cake

Cooks looking for recipe ideas for Christmas cake ingredients could try using cinnamon, cloves and ginger.

These culinary spices were recommended by celebrity chef Nigella Lawson in an article for the Guardian.

Dried fruit is brought to the boil in a saucepan with bourbon or brandy the day before baking and allowed to cool overnight.

Butter and sugar are creamed with grated lemon zest beaten in afterwards, followed by black treacle and almond extract.

Dry ingredients - including the spices - are sifted together and mixed into the creamed mixture with soaked fruits and pecans are folded in.

This is placed in a baking tin and cooked in the oven, prior to removing, brushing with liquor, wrapping in foil and leaving to stand for at least three weeks.

Those who want to serve something a little quicker could try baked apple trifle for a festive pudding with a difference, which Nigel Slater recently recommended as part of his Christmas menu in the Observer.
