Be more ambitious with side servings

With Christmas just round the corner, many chefs may have already begun taking orders from festive menus.

If these feature traditional favourites like turkey, it's quite likely the sides will be quite conventional too - roast potatoes and boiled vegetables for instance.

In an article for the Daily Mail, Jamie Oliver recommended offering diners different choices alongside the usual meals, claiming roast venison served with red wine would be "brilliant".

However, another option caterers may wish to consider adding a unique twist to a single part of a roast.

Sophie Conran suggested an alternative take on glazed carrots that those who enjoy cooking with tarragon may appreciate.

The herb is used in a combination with garlic in order to give the vegetable a distinctive flavour pairing.

McCormick's resident expert Chef Steve says playing with dishes that are not quite right is a great way to improve them.
