Herbs can characterise canapes

When assembling a new set of offerings for a restaurant's menu, it can be difficult for caterers to come up with something truly new and distinctive.

With all the main menu options to be considered, it would be perfectly understandable if the starter section was overlooked.

However, by approaching this in a spirit of enthusiasm and innovation, you could come up with some unique options that will really help to set your menu apart from the crowd.

In an article for the Independent, celebrity chef Mark Hix recommended serving canapes of tomato and basil.

Preparation simply involves placing circle of puff pastry on a baking tray and cooking, before turning over and adding the desired toppings.

There is plenty of scope for innovation here - so don't be afraid to flex your creative muscles and come up with exciting new flavour pairings that may not have been put together before.
