Basil mayo can really add to sardines

Basil can help add taste as well as aesthetically improving dishes

There are a number of different ways in which caterers and chefs can use different herbs and spices to add to traditional offerings.

Often sauces such as mayonnaise are used to complement certain dishes but diners might be happier to taste something a little different.

In an article for the Guardian, famous New York chef April Bloomfield advocated the use of basil in mayo to help bring out the freshness of cured sardines.

She recommended serving the sardines and mayo alongside pequin chilli peppers, heirloom tomatoes and lemon.
