Vanilla pods required for roast plums recipe

Vanilla pods add flavour to plums and cream

People looking for some new flavour ideas may be interested in a recipe from Nigel Slater that makes use of vanilla pods.

They are required to make his roast plums with star anise and vanilla cream, instructions for which were published by the Guardian.

The main part of the dish is made by de-stoning and halving 500g of plums before laying them in the bottom of a large baking dish.

Muscovado sugar is then sprinkled on top, along with two whole star anise and a vanilla pod that has been sliced lengthways.

This is then baked in 75ml of water for 25 minutes, while the accompanying cream is made by combining mascarpone cheese and creme fraiche.

Once again, a vanilla pod is split and the seeds added to the mixture, before both golden caster sugar and light muscovado sugar are used to complete the cream.

Slater recently published a recipe in the Guardian for strawberries with mint and raspberry sugar that many eager cooks may like to try.
