Grilled sardines and fennel a match made in heaven

Fennel is a match made in heaven with sardines

Anyone interested in the flavour pairings fennel has to offer may be interested in this recipe combining the herb with grilled sardines.

Diana Henry, a food author who shared the recipe in her weekly Telegraph column, described the dish as "a match made in heaven".

"The aniseed freshness [is] perfect with the oily flesh," she said, suggesting placing fennel in a bowl of ice for 20 minutes.

To prepare, she also advised thinly slicing and onion and then cutting a grapefruit into thin segments.

She then recommended brushing sardines with oil and seasoning before grilling at a high temperature.

While cooking the fish, she said to drain the fennel and mix with the onion and grapefruit as well as lemon juice, olive oil coriander and mint, then to serve the sardines on top of this salad.

Ms Henry has written six cookbooks and was named Cookery Writer of the Year for 2007 by the Guild of Food Writers.
