Stew lamb with culinary herbs

Mint can give a stew an English twist

One of the most celebrated things about culinary herbs is their ability to bring out the natural flavours of other ingredients.

This makes them particularly effective in recipes such as stews - the slow cooking process really gives them time to set off exciting new flavour pairings.

In an article for the Independent, chef and author of The Little Paris Kitchen - Classic French Recipes With a Fresh and Simple Approach Rachel Khoo detailed her ingredients for a spring lamb stew.

"For the fashion-conscious, the arrival of spring in Paris means that it's out with the winter wardrobe and in with the spring one," she commented, adding that this is just as applicable to meals as it is to clothing.

Bay leaves, garlic and thyme were included in the ingredients and Ms Khoo asserted that bourguignon is "so last season".

Mint sauce was recommended for those who enjoy an English twist.
