Onions are key for Hugh Fearnley Whittingstall

When it comes to celebrity chefs with a penchant for interesting ingredients, Hugh Fearnley-Whittingstall is up there with the best of them.

His River Cottage series has won him a huge following and he is always vying to cook something exciting - usually dishes with interesting combinations of flavours.

However, the chef is also a huge fan of traditional ingredients - like onions - as long as they are used creatively.

Writing for the Guardian, Fearnley-Whittingstall noted that most dishes start with the humble onion, but suggested that they are rarely used as a vegetable in their own right - often just as something to add flavour to a dish.

He noted that the same can be said for leeks, spring onions and chives.

"Onions are also brilliant when roasted: their natural sugars caramelise deliciously, giving them an almost burnt-toffee savour that softens other veg, particularly greens and roots," the chef extolled.

Earlier this month, the chef suggested pickling onions with dill or parsley, adding a unique twist to the preserved vegetable.
