Make a Spanish sauce with culinary spices

Chillies can make a tasty Spanish sauce

Culinary spices are incredibly versatile, offering a wide range of uses in almost any different kind of recipe.

While they are often associated with hot curries, they can also lend a distinctive flavour to a dessert or act as a key ingredient in a salad.

However, caterers are likely to need some things they can make in bulk and preserve for later in the week.

Chef and patron of Ottolenghi and Nopi in London Yotam Ottolenghi recommended the use of chillies and garlic in a sauce that could be perfect for this requirement.

"Salbitxada is a sharp and lightly sweet Catalan sauce that's traditionally served with calcots - spring or salad onions, grilled whole, make a good substitute," he wrote in an article for the Guardian.

Preparation involved roasting the ingredients along with red peppers, before whisking in a blender with grated almonds, in addition to tomatoes, salt and oil - added slowly until the paste thickens.
