Culinary herbs required for Greek pie

Cumin can be used in traditional pies

Culinary herbs are a great way to season all kinds of foods, as they can bring out the natural flavours of other ingredients.

They also feature as a staple ingredient of a wide range of recipes from other cultures.

McCormick's resident expert Chef Steve says one of his key sources of inspiration is researching other culinary traditions, so it could be an approach worth looking into.

In an article for the Guardian, celebrity chef Hugh Fearnley-Whittingstall suggested the use of cumin and thyme in a vegetarian nettle spanakopitta recipe.

He explained this is his own take on a traditional Greek greens pie and works really well when combined with traditional spinach.

"In fact, this particular recipe was developed to make use of frozen spinach (whole leaf, rather than chopped) - it works amazingly well," he commented.

Daubing the complete pastries with butter was advised prior to placing in the oven, as this allows for a textured finish.
