Watching people enjoy your dishes can give you the confidence to succeed, according to Alesha Fletcher-Zimmer, executive chef at Mary Black Memorial Hospital in South Carolina.
Speaking to the Spartanburg Herald-Journal, Fletcher-Zimmer described her first experiences of cooking, saying the early encouragement she received from her mother and sister allowed her to pursue more complex dishes.
"In my family, food has always been associated with good times and celebrations," she explained.
Fletcher-Zimmer said that this simple encouragement led to her practicing cooking with home made versions of local restaurant's meals and eventually progressed on to higher education.
The executive chef also revealed her favourite culinary spices, saying: "I like a lot of spices, salt and pepper and nutmeg... I have been into Indian food over the past several years, so I like masala and coriander."
Fletcher-Zimmer heads up Mary Black's Food and Nutrition Department, which recently won a silver medal in an American Culinary Federation competition. Through the organisation she promotes good eating through healthy recipes.
