Roasted Mediterranean Vegetables

Ingredients:

- 2 aubergines, diced
- 4 courgettes, thickly sliced
- 5 carrots, thickly sliced
- 5 red onions, cut into chunks
- 3 red pepper, diced
- 40 grams
- 3 tbsp Rosemary
- 40 ml honey
- 60 ml olive oil
- Sea Salt to taste
- Black Peppercorns , freshly ground - to taste

Method:

Pre-heat the oven to 200ºC, 400ºF, Gas Mark 6.

Place the vegetables in a roasting tin. Mix in the remaining ingredients and roast for 30-40 minutes until the vegetables are tender.
