Roast Turkey with a Cajun, Sweet Potato and Mango Stuffing

Ingredients:

- 1.5 kg Boneless turkey breast
- 100 grams Sweet Potato, boiled and diced
- 1 Small Onion, peeled and diced
- 500 grams Sausage meat
- 1 Small Mango, diced
- 1 tbsp Blackened Cajun Seasoning

Method:

Pre-heat oven to 180°C

Mix together the sweet potato, onion, sausage meat, mango and Schwartz for Chef Blackened Cajun Seasoning in a bowl

Brush a sheet of baking foil with oil to prevent sticking, place the stuffing mix on top and roll into a sausage shape. Tie the ends off with string and place in the oven for 30 minutes

Allow to rest, remove from foil, slice and serve with roast turkey and all the festive trimmings
