- 8 red medium heat chillies, stems removed and coarsely chopped
- 125 ml rice vinegar
- 5 tsp Schwartz Minced Garlic
- 2 tsp Schwartz Sea Salt
- 1/2 tsp sugar

Sambal is a versatile Southeast Asian chilli sauce used to season stir-fries, noodles, eggs, meat, seafood and vegetables. It is also enjoyed as a sweet, sour and spicy table condiment. This fresh version, prepared in a blender, accentuates the bright flavour of the chillies and can be prepared in 15 minutes or less.

Place all the ingredients in a food processor or blender. Blend until it's all coarsely chopped.

Store in a clean and tightly covered container or jar in the refrigerator up to two weeks.

Hint:

Chillies contain capsaicin which can burn your skin. After chopping chillies, wash hands and cutting board thoroughly with warm soapy water. Wear rubber gloves when handling the chillies. Use Fresh Sambal Sauce to prepare Kimchi Broth Bowl with Crispy Rice and Fried Egg.
