Tortilla Filled with Tuna and a Tex Mex Sauce - School Meal

Ingredients:

- 1.2 kg tinned tuna
- 1.2 kg tinned tomatoes
- 600 grams water
- 1 (sachet)
- 450 grams sweetcorn
- 450 grams garden peas
- 450 grams onion, diced
- 20 corn tortillas
- 200 grams grated cheese
- 25 ml oil

Method:

Sweat onions in hot oil. Add tinned tomatoes, water and the sachet of Schwartz for Chef Tex Mex Recipe Mix. Bring to the boil and simmer for 5 mins.

Mix together tuna, peas and sweetcorn. Spread spicy tomato sauce onto the tortillas, then divide tuna mix amongst tortillas. Roll each tortilla up and place in an ovenproof dish.

Pour the remainder of the spicy tomato sauce over the tortilla , sprinkle with cheese and bake until golden brown.

Each portion serves 10 senior school children / adults and serves 20 junior school children.
