Orange and Vanilla Bread and Butter Pudding

- 1 ml milk
- 200 ml double cream
- 6 medium eggs
- 3 medium egg yolks
- 125 grams golden caster sugar
- 2 Vanilla Pods #NAME?
- 3 oranges - zest
- 7 medium slices of white bread, cut into triangles
- 60 grams large handfuls sultanas
- Icing sugar


Bring the cream, milk and Schwartz for Chef Vanilla seeds to the boil over a moderate heat.

Whisk the eggs, yolks and sugar together and pour over the boiled cream mixture.

Pass through a fine sieve and stir in the orange zest.

Layer triangles of bread and sultanas in a deep ovenproof dish and pour over the custard.

Place in a large roasting tin and half fill with hot water.

Bake for approximately 1 hour in a hot oven, dusting with icing sugar 10 minutes before the end.

Serve with custard, cream or ice cream.
