Serve pulled pork with fennel slaw

Fennel can be used for slaw

When it comes to preparing staple dishes such as Sunday roasts, it can be a good idea for caterers to think of some of the various ways in which they can bring their own unique twist to the meal.

In an article for the Independent, celebrity chef Bill Granger suggested serving pulled pork with fennel slaw and jalapeno mayo.

"I can never resist the porchetta vans you find in Italy serving roast-pork Panini," he commented, adding that for his own version of the recipe: "I've added a crunchy, zingy slaw and mayo with a kick."

Preparation of the slaw involved placing a finely sliced bulb of fennel in a bowl with a chopped Granny Smith apple and mixing all this together with a drizzle of olive oil and a squeeze of lemon.

But you can always try to bring something new to the meal by making a garnish of your own creation - just try to think about what herbs and spices complement the natural flavours of pork.
