Fennel can be the main attraction of a salad

Fennel can make a salad

When coming up with new recipes for a restaurant's menu, it would be easy for caterers to rush past the starter options in order to focus on the main meals.

However, it is important that these are not overlooked completely, as a truly distinctive starter could really help your offerings to stand out.

Owner of London's chic Dabbous restaurant Ollie Dabbous recommended preparing a fennel salad with pickled rose petals.

In an article for the Daily Telegraph, he explained that this is a light and fragrant salad that can also benefit from the addition of mint and dill.

Our resident expert Chef Steve says that one of the best things about culinary herbs and spices is their versatility - they can bring something new to almost any dish.

Their use in a salad here really emphasises this - but why not try coming up with a similarly innovative approach of your own?
