Italian food is best when it is simple

Italian food is best when it is simple

Italian food is at its best when it is kept simple. A straightforward Green Pesto, some Italian Seasoning and a sprinkling of Basil can go a long way to making any number of delicious dishes.

But don't just take our word for it. Italian chef and TV culinary legend Antonio Carluccio has reiterated the important - and distinctly Italian approach - to fine dining: simplicity.

Speaking to the Yorkshire Post ahead of Malton's Food Festival, the 75-year-old said his mother's cooking was always "simple but delicious". He was particularly fond of her omelettes and frittata.

And because Italian food can be so simple, it is possible - with a few handy ingredients - to create some masterpieces from scratch.

Angela Hartnett, chef at London's Murano restaurant, recently told the Guardian of the joys of the ultra-simplistic southern Italian dish of orecchiette.

The name refers to the unusual 'ear-shaped' pasta that embodies the dish, but budding chefs can use an array of ingredients such as culinary spices to breathe life into this Italian staple.
