Use thyme in a risotto style dish

Risottos are great with thyme

Culinary herbs are celebrated for their versatility, as they can be used to bring a new twist on anything from a hot soup starter to an unusual garnish for a pudding.

But this kind of experimentation does not need to be limited to old favourites - why not try using a homely and familiar herb to add a comforting feel to a new recipe?

In an article for the Guardian, Hugh Fearnley-Whittingstall claimed to have come up with the term speltotto to refer to a dish he makes that is a different spin on a risotto.

He used thyme in a vegetarian-friendly leek and broccoli version of this dish, as this can bring a distinctive flavour to the key ingredients when they are being fried.

"You can also, if you're feeling carnivorous, stir in some diced, fried bacon or chorizo at the end instead of the cheese," he remarked, indicating meals such as this are always good to play around with until they are just right.
