Yellow lentil soup recipe needs culinary spices

Garlic is one ingredient in the lentil soup

Chefs searching for recipe ideas to freshen up their starter menu might want to consider soup made using yellow lentils.

In an article for Canadian press agency QMI, published by the Toronto Sun, Jill Wilcox explained culinary spices can be combined with the ingredient for an easy-to-make dish.

Legumes - which include lentils, peas and soybeans - are increasing in popularity, she observed, adding there is a wide variety of lentils to choose from.

For her recipe, she advised using herbs and spices such as cumin and coriander seeds that have been dry-roasted and ground up, as well as ginger, garlic and jalapeno peppers.

The soup, which requires no stock, can be given a touch of colour by dressing it with spinach just prior to serving, while freshly squeezed lemon juice also improves the flavour.

Marco Pierre White, in an article for the National, recently advised adding spices - such as cardamom pods - to carrot soup in order to make the dish more interesting.
