Herbs can infuse a baked ricotta

Almost any chopped herbs can work in ricotta

Ricottas are flexible dishes that give professional caterers a very wide scope as to how they can customise them.

In an article for the Daily Telegraph, host of The Splendid Table and cookbook writer Diana Henry suggested baking a ricotta with asparagus, roast tomatoes and black olive dressing.

Her recipe included between one and two tablespoons' worth of culinary herbs and basil, flat-leaf parsley, chives and oregano being recommended in particular.

However, a chef could really bring their own unique twist to the dish by trying something really adventurous with culinary herbs and spices.
